Hospitality Project Management
A venue that opens three weeks late has paid three weeks of rent and wages before it sells a coffee. We work client-side for hospitality owners and operators, from the first feasibility numbers through to the day you trade. One team holds the program, the budget and the approvals while you get the venue ready to run.

Your Trusted Hospitality Project Management Consultants
A hospitality project manager working client-side represents the operator from site to opening. For restaurants, cafes, bars and hotels that covers site sourcing, feasibility, council approvals and the licensing pathway, procurement and tendering, then oversight of the fit-out. The designers and the builder own their parts. We make sure each one lands when the program needs it.
Project management in the hospitality industry is mostly settled before the fit-out starts. The grease trap and mechanical exhaust set the kitchen layout, the kitchen layout sets the licensed floor plan, and the floor plan is what council assesses while your fit-out crew sits booked and waiting. Those calls belong to your designers and certifiers. Getting them made in the right order is our job.
Our hospitality and restaurant project management covers as much of the program as you need, whether that is one venue or a group opening its fourth. Program, committed spend and open approvals sit on a dashboard you can log into, so whether you are still opening on the 14th is something you can check yourself.

The hospitality projects we manage
A 40-seat cafe, a licensed restaurant and a hotel refurbishment are three different jobs with three different approval pathways. The cafe is a fit-out. The restaurant adds a liquor licence and mechanical exhaust. The hotel adds rooms out of service and lost revenue for every week the work runs over.
We offer our project management consulting services for:
Restaurants and licensed venues
Cafes and quick-service formats
Bars and late-trade venues
Hotels, hostels and short-stay accommodation
Wellness additions to operating hotels and hostels
Multi-site rollouts, where each venue should open faster than the one before
Most hospitality groups are planning the next venue before the current one opens, and the early work is where they save: site sourcing, the kitchen and services strategy, and procurement decisions made before anyone starts drawing. Hotels and hostels add another layer, because the work happens around guests who are still checking in, as it does on the bathhouse addition at Drifter Hostels' Cairns site.
Ayres Consulting works with hospitality, wellness and fitness operators nationally from offices on the Gold Coast and in Sydney. Most get in touch when a second or third venue is on the way and the people who ran the first one are busy running it.
